It was my Niki’s 12th birthday, we were having a party at home. I was wondering what to make as a starter for the pre teenagers as it is hard to please them. I had pesto in the refrigerator and some bread. Caprese is such a favorite for all of us as we dine frequently in Italian restaurants. As we are vegetarians Caprese is always a regular order for us.
Niki loves Italian food. So it had to be an Italian menu for her big day.
I have used Bocconcini (pronounced bo-kon-chini) which is a Italian cheese made from cow’s milk.

INGREDIENTS

10 slices of white bread
-
10 Bocconcini cheese balls halved

6-8 tbsp basil pesto
-
10 grape or cherry tomatoes halved

Salt and pepper to taste

Basil leaves for garnish, optional

Toothpicks as needed
PREPARATION
Step 1
Get good quality thick sandwich bread and cut the crusts. Cut each slice into half.
Step 2
Spread pesto liberally on the halved bread.
Step 3
Take a toothpick skewer halved cheese and tomato. Stick the toothpick into the bread arrange on a platter and serve with basil on top.
Notes: this can be made a day ahead of the party and stored in the refrigerator. Cover with a damp towel so the bread keeps moist.

The famous proverb "you are what you eat” as quoted by the French author Anthelme Brillat-Savarin is very true. Food nourishes you from the inside out. Good health is of utmost importance to me.
