This dish was a result of getting the flour blend and then making the recipe. True! I was shopping at Costco and found Namaste Foods brand Perfect flour blend and bought it on a whim. I didn’t know what to do with it until I thought of trying to make cookies out of it. As with any new recipe there were many trials and errors with this cookie too.
Niki loves to have these cookies after her school as a snack. She says there is no guilt with eating these.

INGREDIENTS
- 1 cup Gluten free flour, any variety
- ½ cup or less maple syrup
- 1 tsp vanilla extract
- ½ cup or less coconut oil, melted
- ½ tsp salt
- ½ tsp baking soda
- ½ cup chocolate chips
PREPARATION
Step 1
Preheat oven to 375 degrees F.
Step 2
Mix dry ingredients with a whisk until combined.
Step 3
Now add in the wet ingredients and mix. Do not over mix.
Step 4
Scoop 2 tsp of the dough with an ice cream scoop or make small truffle size balls and flatten lightly. Place on a greased baking sheet about 2 inches apart.
Step 5
Bake for 10-11 minutes or until the top of the cookie looks light golden brown. Remove from oven and place on a cooling rack. Store in an airtight container for up to 4-5 days.
Notes : You could use any gluten free flour or flour blends as well.
