My love for greens is not new and I do not forgo any opportunity I get to buy and cook greens. Recently on a trip to the grocery store I found a head of romanesco and immediately bought it. There are many ways you can cook this green beauty, but I decided to steam and kick it up a notch with chili powder. I also added parmesan cheese which I must say took the dish to another level.
Romanesco is a hybrid between broccoli and cauliflower which is chartreuse green in color. It is loaded with Vitamins A, C and K and low in carbohydrate making it ideal as a salad or a side to any main dish.

- 1 whole head of romanesco, cut into quarters
- 1-2 tsp crushed red chili
- Salt to taste
- 1 tsp red chili powder
- 4-6 tbsp grated parmesan cheese
- 2 tbsp lemon juice
- 2 tbsp extra virgin olive oil
- Bamboo steamer or any kind of steamer
Step 1
Wash the romanesco well and dry completely.
Step 2
Cut into 4 or quarters and season with salt. Place in the steamer and steam for 12-14 minutes.
Step 3
Top with crushed chili, chili powder, parmesan, lemon juice and olive oil. Serve immediately. This can be eaten as a salad or an accompaniment to any main dish.
Notes:
The chili powder and crushed red chili can be reduced as per personal preference.
